One of the treasures I discovered while on my adventures in Ireland were baked Scones. Those beautiful buns can be made plain (white or brown), glazed or non-glazed, or with raisins.

I particularly like the raisins scones. They can be eaten for breakfast, as a treat, or as a snack at any time of the day.

The best way to enjoy it is to consume it not long after coming out of the oven with a dollop of real butter that melts until your heart is content. You can also add a spoon of raspberry or strawberry jam on the top. And it is at its absolute best when accompanied with a good cup of tea.

What do you need to make your own scones:
250g plain flour
2 teaspoons of baking powder
Pinch of salt
50g of caster sugar
50g of cold butter
1 big egg
100ml milk
50g raisins

PREPARATION:
1. Preheat the oven to 180 degrees.

2. Mix the flour with baking powder, add the butter cut into pieces, add sugar and salt. With your fingertips rub in the butter until the mixture resembles rough breadcrumbs.

3. Whisk the egg together with milk. Put aside a small bit of this mixture to glaze the scones at the end.

4. Pour the wet mixture into the breadcrumb mixture, and mix the two together, add the raisins and mix a little more until a dough forms.

5. Place the dough on a clean, flat surface, and roll the dough out to a 3cm thickness. With a metal pastry cutter (or if you don’t have one, with a drinking glass) cut the circular shapes and place them on a baking sheet. Brush each scone with the mixture of egg and milk on the top.

6. Place the scones into the oven for 20 minutes until they have risen and turned golden brown at the top.

Take them out, add butter and jam and enjoy! It is a proper mood lifter for any occasion!
