When the weather gets colder and the days become shorter, you know it's the middle of the fall semester, and university is kicking your ass. The mood is very much stresso depresso, and the vibes are just not it. But every cloud has a silver lining. That's why Girls Night In is coming to the rescue with another episode. This time, in honor of the new Hunger Games movie, we held a symbolic get-together. As usual, we munched on our themed girl dinner and sipped our girlie cocktails while discussing some of our all-time favorite films. Of course, there are some hidden gems you don't want to miss. So, fix up your drink, grab the bowl of popcorn, and tune in to the latest episode of Girls Night In.

Now, you didn't think we would leave you empty-handed, did you? Read on to find the best complimentary snacks and drinks - popcorn and Cuba Libre, for the perfect movie night. 

Girl Dinner: Classic Popcorn

Ingredients  

  • Three tablespoons coconut oil or extra virgin olive oil 
  • 1/3 cup high-quality popcorn kernels 
  • One tablespoon butter or more to taste, optional 
  • Salt to taste 

Instructions 

Heat the oil over medium-high heat in a 3-quart saucepan with a thick bottom. If you are feeling fancy and want to use solid coconut oil, let it fully melt before using it. Put 3-4 popcorn kernels into the oil and wait for them to pop. Add the remaining 1/3 cup of popcorn kernels in an equal layer. Cover the saucepan, remove from heat, and time it for 30 seconds. That way, when you put it back on the stove, the popcorn will pop around the same time. When the popping becomes more intense, gently shake the pan over the stove. Take the pan off the heat when the popping slows down to a few seconds between pops. If you want extra buttery popcorn, add butter to the hot pan, but don't put it on the stove. The heat is enough for it to melt. Drizzle the melted butter over the popcorn and sprinkle some salt. Serve them alongside a glass of Cuba Libre. 

Cocktail of the Night: Cuba Libra

Ingredients 

  • Two ounces rum 
  • One lime wedge 
  • Coca-Cola, to top 
  • Garnish: lime wheel 

Instructions 

This recipe is easy peasy lemon squeezy. Pour the rum into a highball glass filled with ice. Add the lime peel and squeeze the juice from 1/4 of a lime. Pour the Coca-Cola on top and mix gently for a few seconds. Garnish with a lime wheel.
