In a few days it is Kingsday! sadly, all events have been cancelled for the coming time. This means you have to celebrate Kingsday at home. That is why I decided to share some really nice, typically Dutch recipes to try at home. every day untill Kingsday, I will share one recipe with you. Feel free to check out my page for more recipes!

Stuffed egg:

You probably know stuffed eggs. A cooked egg where the egg yolk is made into a pastry and then added back into the egg white, sliced in half.

Fun fact: The first written recipe of the stuffed egg comes from a Dutch cookbook from 1756. Making this a typically Dutch dish. With Kingsday coming up, this is a nice and easy recipe to treat yourself and those around you.

This recipe is for 20 stuffed eggs, but you can always make more or less of course.

Ingredients you need:

10 eggs

3 tablespoons of mayonnaise

1 tablespoon of curry

1 tablespoon of mustard

1 tablespoon of freshly chopped chives

Some salt and pepper

The steps:

1. Pinch a small hole at the convex surface, for the air to release while cooking.

2. Cook up some water and hard boil the eggs for around 12 minutes. (make sure the water is not boiling too hard).

3. Put the eggs under cold water, so the shell loosens from the egg. Then take the shell off.

4. Use a sharp knife to cut the eggs in half, vertically. This means that both slices of the egg are equal to each other in size.

5. Carefully scoop the boiled egg yolks out of the boiled egg white and put them together in a bowl. Put the egg whites on a plate for later.

6. Add the mayonnaise, curry, mustard and partly the chives into the bowl with the egg yolks and mix it all together with a fork. Make sure the egg yolks are mashed together with the other ingredients.

7. Now it is time to bring your egg whites back. Make sure they all have the sliced side upwards. If they keep on tilting, you can make a small slice at the bottom, so they won’t tilt.

8. Use a piping bag or a spoon to fill your egg whites with the egg yolk mixture. The piping bag will make the end result look better, but with a spoon they taste exactly the same. It is important that you stuff the eggs generously, so the egg yolk mixture sticks out.

9. Add some salt, pepper and chives to finish it off.
