In The Netherlands, there is nothing more Dutch than stamppot, which literally translates to mashed pot. It's a traditional Dutch dish made from a combination of potatoes mashed with one or several vegetables and other toppings. The best thing about stamppot is that it's so easy to make and it's also very cheap! So, here's a great recipe to warm your belly on a cold winter day.
Ingredients
• 750 grams peeled potatoes
• 1 onion, chopped
• 2 tbsp. normal butter/vegan butter/oil
• About 500 grams of vegetables - I recommend kale (chopped into strips), peas, and baby carrots
• 1 cup of normal milk/plant milk or cream (soy, coconut, etc.)
• Pinch of nutmeg
• Salt and pepper - to taste
• Your choice of sausage or schnitzel (hopefully veggie) from the supermarket – cooked/fried
Method
1. Chop the potatoes and in a large soup pot, boil them in salted water for 20 minutes, or until soft.
2. Clean and chop all your veggies, also the onion. Make sure they look nice and that you got rid of any soil or brown leaves. If you are using frozen veggies – cook them before for a bit.
3. In a frying pan or skillet, melt 1 tbsp. of butter and fry the onion for a few minutes before adding the other veggies. When soft and tanned, add 2 tbsp. of water. Season and cook for about 10 minutes, or until tender.
4. Warm the milk on the stove or in the microwave.
5. Drain and dry the potatoes before mashing with a potato masher or fork. Working quickly, add the warm milk and the remaining butter. Season to taste with nutmeg, salt, and pepper.
6. Mix the fried veggies through the mashed potatoes.
7. Top with sausage or schnitzel and serve hot with your favorite mustard or gravy.
